I can't, for the life of me, remember where I first saw this roasted garlic recipe. It was really simple. Take a bunch of garlic cloves, slice off their heads, drizzle oil, sprinkle salt, herbs, wrap it up with parchment and string, then pop the whole thing into the oven. 30min later, bliss. The blogger recommended spreading it on crusty toast, mashed avocado and sundried tomatoes optional. Yums.
So tonight, while Finance Minister was preparing her fabulous beef stew, I decided we should try this version of garlic toast. We improvised and used a tabletop sandwich toaster instead, and placed individual garlic cloves on the grill instead of a whole head. Still worked ok. Spread the garlic-butter mixture of thick-sliced bread, then heated it up. Delish. Even better when used to mop up the beef broth :-)
